Mikael has happily inherited his parents' obsession with taste sensation - being the founders of some of the most exquisite dairy and food productions in the country, as well as founders of incredible gourmet restaurants.

'The inspiration and the lifeblood of Summerbird are pieced together by many factors and impressions- The inheritance from my parents, the passionate staff, the Beatles, my upbringing with unique agriculture, my insistence on simplicity and complexity at the same time, Danish furniture tradition, etc. etc. All these are funds for inspiration in creating Summerbird's very own universe of taste.'
